Honoring My Mother Through Cooking

Let me take you on a culinary journey to northern Iraq, where home cooking is everything, and my mother's kitchen was renowned.

Nohadra is the Chaldean name for my hometown, Duhok. There, at my mother's elbow, I learned the secrets of spice, flavour, and baking.

Nohadra's Kitchen is an expression of a daughter's love for her mother and her recipes.

Many of those recipes lend themselves to a vegan twist, but the accent is always on flavour. Not everyone can travel to the aromatic kitchens of northern Iraq, but Australians can now enjoy its cuisine at home.

Menu

Kuba Halab (rice balls stuffed with mushroom) served with salad and homemade sweet chilli sauce.

Dolma ( vine leaves, silver beets stuffed with spiced rice) severed with salad and coconut yoghurt.
